Food preservation and canning

Improper canning—especially of low-acid foods—can allow Clostridium botulinum and other pathogens to grow. Botulism can cause severe illness or death. Use current, tested recipes and process times from recognized authorities (for example USDA and National Center for Home Food Preservation guidance). Do not invent process times, shortcut pressure requirements, or treat open-kettle or oven canning as safe for low-acid foods.

Water

Untreated or improperly treated water can carry pathogens and chemicals. Notes about storage, filtration, or disinfection are not a guarantee of potability. When in doubt, use proven treatment methods and test where appropriate.

Tools, energy, shelter, and skills
